Vegetarian Thai Green Curry
Recently coriander has been making headlines as a super spice for its many health benefits. Purchased fresh or in seed or powdered form, coriander is now highly regarded for its anti-inflammatory and cholesterol-lowering properties. In Europe, coriander is used to prevent and treat diabetes; it has even been found to fight off salmonella! Eaten fresh, coriander is a good source of phytonutrients plus minerals such as iron, magnesium, and manganese. Make full use of this healthy spice in all its forms by cooking up some Thai food.
